Free Inquiry Post 2 – Meal Prep #2

Hi everyone! Welcome to my second meal prep blog! I had a big meal prep on Sunday where I made lunch and dinner for almost the whole week. Despite the fact that it was a decent amount of work, it makes the rest of the week so much easier! I made one pasta dish and one curry dish, and they both turned out very well. It took me about three hours for prepping everything, cooking both meals, and cleaning up. It was not super efficient but it didn’t take up too much of my Sunday either so overall it was a good starting point. Now to get into what I made!

This is the first thing I made for lunches this week, it is a rose pasta sauce made with Italian sausage, veggies, and gnocchi. If I am being honest for this meal I didn’t really use a recipe, I just tried something out. My friend’s Dad always used to make a recipe like this and I loved it, so I texted her asking approximately what he did for it and then tried it out myself! I made it by cooking up the sausage, adding one onion and garlic, then after a couple minutes I added about 2 carrots, then one pepper and two zucchinis. Once that was all mostly cooked, I added one small can of tomato paste plus some passata we had in the house and I cooked that for a few minutes. Then I added a splash of white wine, and some pasta water from cooking the gnocchi. Lastly I finished the recipe with a good splash of heavy cream and all of my seasonings (oregano, thyme, basil, salt, pepper, chili flakes, paprika, chili powder, garlic powder). I let it cook for a few more minutes and then added my gnocchi. This is a super easy recipe it just has a decent amount of prepping with chopping all of the vegetables. It turned out great, I would give it an 8.5/10. Next time I make it I will definitely add a bunch of parmesan (I just didn’t have any in the house).

Here is the second meal I made for dinner this week! It is a green lentil Dal recipe that I tried out for the first time. I wanted something very different from my lunches so I thought a curry would be a great option. I have linked the recipe I used here in case anyone wants to try this meal! It worked out super well, I would give it a 9/10. I did make a couple adjustments to the recipes to make it a little bit bigger. The first thing I did was add an entire can of chickpeas (make sure to rinse the chickpeas very well). The second thing I did was add an extra carrot and one whole pepper chopped up, just to add some more veggies. I also baked some pork chops that I seasoned with similar seasonings as the curry and then just chopped up and mixed them in. I added this because I had some pork chops in the freezer that needed to be eaten so you definitely do not have to do that. The last adjustment I made was adding more vegetable broth and extra seasonings because I added extra ingredients. It worked to add about an extra 3/4 cup of vegetable broth and just add heaping teaspoons of all the seasoning. My partner and I eat our curries over a mixture of white rice, quinoa, and green lentils to add more fiber and protein to our diets. Although it is not quite as tasty as only having white rice, it is still pretty good. Well that’s all for my free inquiry, I am quite happy with my progress this week!
